Huauzontle. An Overlooked Mexican Vegetable

huauzontle-closeup.jpg
Dear Fr. Tom,

Here is some information on huauzontle from the Aztec/Nahuatl huautli, admonition, and tzontli, hair.\

Huauzontle is related to quinoa.

2.) The following video clip is somewhat eccentric but captures the essence of huauzontle which (as you will see) is traditionally prepared just as Herlinda prepped it for you: https://www.youtube.com/watch?v=bt3-FndeqvQ

3.) Here is another video that presents a less traditional approach to huauzontle preparation. http://www.themijachronicles.com/2010/09/how-to-clean-huauzontles-and-prepare-them-for-cooking/

4.) From "Gourmet Sleuth": Huauzontle is traditionally eaten during Lent. http://www.gourmetsleuth.com/ingredients/detail/huauzontle

See you next Sunday!
