Caesar Salad. Simple Dimple Preperation

Caesar Salad Dressing 

Enough for 2 - 3 large salads

(Dressing lasts a week when refrigerated - probably longer without egg yolk)

1/2 to 3/4 cup olive oil

1 teaspoon to 1 tablespoon of red wine vinegar

2 tablespoons mayonnaise

3 large cloves garlic pressed

1 teaspoon salt

1 teaspoon pepper

1 teaspoon Worcestershire sauce

2 teaspoons Dijon mustard

4 anchovies cut and mashed (or corresponding amount of anchovy paste)

Juice of half a lemon (or less)

2 egg yolks optional. (I don't use them.)


Preparation:

Blend ingredients with whisk, "drizzling" the olive oil on the other ingreients so that it gets thoroughly mixed a little at a time.


Ceasar Salad Ingredients

Romaine lettuce. One to one and a half large heads.

Parmesan

2 hard boiled eggs diced

Croutons

Bacon bits

Diced avocado (optional)
